Homemade Calzone

Another Pinterest recipe! Homemade Calzone – oh my gracious!!!! This recipe I posted on my account a while back, but never got around to making it. The recipe is extremely easy! Well, at least for someone who is used to milling their own wheat for their bread! It hardly took any time preparing the dough, and then all you had to do was insert your toppings!

My only tip – if you’re going to braid the bread, make sure that you have the same amount of pieces on each side of the calzone! I didn’t do that, which caused one end to have more bread than the other… but was still great! Another suggestion, load up on the toppings! I did a small layer of each topping, but it could have stood more! I put sauce, pepperoni, onion, thought I had green pepper, but didn’t! And then on Aaron’s side I put mushrooms *gag*. I only did one layer of each but I suggest adding at least one more layer! There’s plenty of room for this guy to expand! I cannot stand the canned pizza sauce. I just think it tastes… gross and fake! So, I used spaghetti sauce instead. My mother was disappointed that I didn’t make my own sketti sauce! Maybe next time I will… It would be even more fabulous with some homemade spaghetti sauce! mmm mmm mmmmmm!!!!!

Pinterest and Cooking!

I absolutely love cooking and trying new recipes! Well, I have dedicated this week to trying new recipes I have found on Pinterest. Now, given, I probably won’t cook a new dish EVERY day… but I have already cooked two! And I have at least three more that I want to try this week!

Yesterday, I made Brown Sugar Banana Pancakes! My gracious! They were wonderful! But they were really rich! You wouldn’t be able to eat too many of them without getting sick! Eliza wouldn’t touch them (go figure!) but Jude ate them up! So did Daddy 😉

Today I made Cajun Chicken Stuffed with Pepper Jack Cheese and Spinach. I thought of my dad as soon as I saw it! He loves some spinach! It was extremely good! Aaron loved it. Only thing I wasn’t too keen on was the obvious spiciness to it! I hate spicy food! But it wasn’t too much to handle 🙂

I’ll post as I keep trying these recipes… it should be interesting! Menu includes items such as shrimp tacos with a cilantro lime sauce (YUMMMMY!!!!) and some type of pesto chicken… can’t wait!

A Clean House?? But I have TWO kids!!!

How many of us have said this? Some of you may only have one kid… others may have more! And I don’t know about you, but I have a really hard time keeping a clean house with a 2 year old and a 1 year old running around being complete terrors! Seems like everything I put away is now their favorite toy! Just as soon as I put it up, they’re behind me taking it right back down! I usually have the house picked up right before I start supper. I then put the kids in the play room while I get to cooking – by the time my husband comes home they have completely tore up the play room and I have completely tore up the kitchen! Makes it look like I haven’t done a thing all day!

With a family of four, I have a ton of laundry to do every week! Especially with two babies spilling food and drink on themselves all the time! It seems as if I am always playing catch up on the laundry as well. What makes it more difficult in my case is the laundry room is on a different level of the house. I then have to go up and down stairs and pray that the kids don’t kill themselves (or each other…) in ten minutes I’m not around the corner! I find I never get the laundry done because I get preoccupied by everything else I need to do! Sweep, mop, dust, pick up, play with the kids some, oh my goodness look at the bathroom… wait… I didn’t finish sweeping! Or did I??? I don’t remember… My mind goes from one place to the next and I never seem to get anything finished!

Well, a brilliant friend of mine suggested I make a schedule for myself for the week to get the cleaning done. I wasn’t so sure about it at first, so I started doing some research. I didn’t even know where to start! How do you divide all the house work evenly throughout the week and keep a clean house??? I found a website of a lady who was having the same problems I was! She had already made a calendar for herself and has made it available to anyone who is interested! I JUMPED ON IT! You can make it your very own! I did exactly that. Although it’s only been a few days – I AM LOVING IT!!!! It seemed like I would clean all day, and yet never felt okay to sit down and rest or to just spend time with my kids. Now that I have it all written down on a piece of paper to mark it off, I know that everything is going to get done… just maybe not today. Here is the link to the website… stay tuned to see how my progress goes! Aaron noticed the difference on the first day. He walked in and said, “Wow… the house looks great!” WOO HOO! Finally!!! He got home and it looked decent!!! And I wasn’t completely worn out by the time he got home from running around like a psycho path trying to get things picked up!!!

The Fall Season

I absolutely love this time of the year! Temperatures are cooler, the leaves are changing, and the Christmas season is right around the corner! This past weekend was absolutely fantastic. We all went and met my family and some really good friends in the mountains this past Thursday. It was my mom’s Birthday weekend and we got to spend it with her. I miss them so much it hurts! But I’m so thankful that we live in a day and time where traveling to see one another isn’t as difficult as it could be. The scenery was absolutely gorgeous. It never ceases to amaze me the splendor and glory of our Lord’s creation. Every season He paints a different picture with the beautiful mountains and different colors of the leaves. It’s simply amazing. It was a weekend full of memories. Eliza is now old enough to run around outside and enjoy the hills! We cooked a LOT of good food and played a lot of board games. The guys all rode their motorcycles – thankfully we made it there and back in one piece! The Lord protected us and for that I am forever grateful! We rode motorcycles throughout the mountains. That was awesome – scary!!! But awesome. It’s a different view when you don’t have a vehicle blocking your view!

For mom’s Birthday, 2 of my sister and I went in together and bought her a Nutrimill! She baked us some bread while we were there! So tasty!!! Can’t wait to hear her stories about baking and if she finds any new, interesting recipes! I’ll be sure to share! =)

I will try to keep my blogs up to date! I have fallen behind a lot!!!

Stress and Patience

All I know to say is this has been a ridiculously difficult week! I was going to write yesterday about patience… then the stress set in yesterday!

The week has been long and difficult as it is… but on Tuesday I went to the grocery store, by myself, with 2 babies!! Difficult, yes, but extremely doable and they both behaved so well! I couldn’t have been more proud! Got home that evening and had bought 2 gallons of milk. I opened the refrigerator to get something and one gallon came flying out and exploded all over the kitchen! I was so upset! Got it all cleaned up and then hollered for Aaron to come pull the refrigerator out cause the milk had poured all under there! Got that all straightened out. Took us about 20 minutes! Well, I opened it again and the OTHER gallon came flying out and exploded!!!! I was like “What in the World?!” This time it went all over the dining room!!! All I could think was, “Is God trying to teach us patience?!” Jude was screaming, he had a gas bubble, Eliza was finished eating her snack and wanted to get down so she wasn’t too pleased either. Aaron helped me clean it all up and he picked up the baby. I went to go get the gas meds, came to where Aaron and the baby were and in an attempt to get the baby positioned correctly he knocked the medicine out of my hand and it went flying and spilled EVERYWHERE! what the heck?!?!?! Aaron had had it and went outside for a bit! LOL! I thought to myself, “Well, I KNOW I have not asked for patience!!” But it appeared that the Lord was trying to give it to us anyway!

Well, yesterday it got better and better. I was delivering dinner to close friends of ours who had undergone a procedure when Aaron called me saying we needed to take Eliza to the ER, she had fallen and hit her forehead on a book case. To say the least, I was terrified of what I was going to see when I got home! She had about a 1 inch gash above her left eyebrow. I had called GiGi and Pop Pop to come get the baby and they met me there and Aaron and I hauled booty to the ER. Thank the Lord we didn’t have to wait too long at all. We had gotten there about 6 and were out of there by 8:30. 5 stitches in her tiny little forehead. You talk about one sad mommy and daddy. We had to hold her down while she screamed and got stitched. It was so difficult… but all I could think is that she is in God’s hands… which is the best place she can be.

Vacation & Storms… Oh my!!!

I know it’s been quite a while since I posted, but we went on a fabulous vacation to go visit my family in Alabama. We left a day earlier than planned in an attempt to miss all the hurricane traffic. Hurricane Irene was heading right for us and had we left the day we had originally planned then we probably would have been stuck in evacuation traffic! We were hit directly by the storm and personally had some damage, but it could have been much, much worse! As many of you know, we live in a loft apartment in our barn. However, since we had babies, my husband added on a couple of rooms as well as a laundry room to the downstairs area. We got about 8-10 inches of water in our down stairs area. All I know to say is thank the Lord for family! Aaron’s family jumped right in when we needed them! During the eye of the storm and ripped up the carpet, emptied the rooms, dried out our belongings etc. I don’t know what we would have done without them! We would have certainly been in a mess coming home to that!

On a lighter note, we had a wonderful visit with my family! I wish so much that we all lived closer to one another! A couple of highlights of our trip included Possum Day and a trip to the Birmingham Zoo! Yes… Cullman has a Possum Day! And if I can remember correctly, if the possum came out and felt a breeze, fall is coming early! If he didn’t, it was going to be so many week later. Well, thank the Lord the Possum felt a breeze! HA HA! To make the story more interesting, the week of Possum Day, the possum died! How awful is that??? They had to call in the back ups… Possum from the zoo! Anyways, we went as my dad’s band was playing for the event. We had such a great time!

We took the babies, Eliza, Jude and Camp to the zoo on Wednesday. It was SO much fun. Jude was a bit tiny to realize what was going on, but Eliza and Camp were intrigued by all the animals! It was extremely hot, but they had a little water area for the kids. Camp and Eliza had a blast!!! I posted a few of the pictures here!

The week went by way too fast, but it was so much fun! Now, back to the grind at home!

Losing Weight…

Good Morning!

Well, first off, I have had some inquiries about the recipe for the Laundry Detergent. If you look under the February 2011 blogs you will find the detailed recipe there! Let me know if you have any questions about it!

Let’s be honest – trying to lose weight SUCKS!!! Horribly sucks! I am absolutely horrible at it… always have been! Especially after being pregnant and eating whatever I want. It’s always been hard for me to cut down and lose the weight. After I had Eliza, I tried my own thing and lost some weight, but was still extremely overweight and weighed about 10 pounds more than I did before I had her. The word “Diet” has always scared me… I don’t like being told that I can’t have this or can’t have that. I just love food!! ha ha! As soon as someone tells me I can’t have something, I crave it even more!!! Since I’ve had Jude I have made the decision that I HAVE to lose weight and get back into shape. If nothing else… to just be healthy! Be able to run after my kids and play with them and not be out of breathe! To feel good about myself.

Well, on July 27th I joined Weight Watchers. They were running a deal I couldn’t refuse and I had heard so many success stories about it! I thought, “why not?” Well, I have absolutely LOVED it! Because I am a nursing mom, I have to keep my points much higher than other women… which is perfectly fine with me! Overall I’ve learned that I haven’t been eating enough to make my metabolism burn the calories! I also wasn’t making good choices when it comes to eating. I have been on the diet for 3 weeks now and have lost 10 lbs! I am 7 lbs away from being the weight I was when I found out I was pregnant with Eliza!!! I’m so excited! I actually cheated and got on the scale this morning just to “check”. I was 3 lbs lighter than my last weigh in.. but I’m not going to record that until my weight in day! And here’s the thing that excites me the most… I am never hungry!!! I’m considering this a lifestyle change more than a “diet.” I am ready to be healthy!!! I have been so excited about Weight Watchers that I have been sharing with everyone! A couple of my close friends have also joined! One has lost 10 lbs, another about 9… all in just a few weeks! Now, they do say that the first 3 weeks you lose a lot of weight and it should then become about 1 lb a week… still not bad! If I keep this up I’ll be great come Christmas! *wink* I joined the online group which is only $18 a month… that’s doable for me!!!

Here’s my encouragement to anyone who is trying to lose weight – stick to it! You can do it! I know it’s so difficult to do! I know from experience! Try to find a group of friends who are trying to live the same type of lifestyle you are – it’s a great encouragement. I have 3 friends in Weight Watchers right now and it’s an encouragement to hear that they also have bad days, good days, and are still losing weight as well!
